Tasting Notes for Theory of Chaos

Dark, opaque with Red overtones in the glass. Head is dense, darkish latte that is quite persistent.

Aroma is dark fruit, plummy and dark cherry. Very nice nose, Strisselspalt hop comes through as a Sauvignon Blanc type wine character that gets more prominent as it warms and the taster has had some of the beer.

The flavor is malt forward and not hot as you would expect for the ABV. Malty with some caramels, cherry and dark fruit, some plum without the skin.

The beer is full bodied and very smooth, the ABV comes through as slightly belly warming with the consumption of about 10 oz, but not in the tasting.

Compared to previous year’s beer, this is dryer and not as cloying, as fermentation progressed longer and the beer was allowed to lager in the tanks for 6 weeks or so after fermentation was mostly complete.
